Caesar Salad

Ingredients
  • Salad
  • 1 large cos lettuce
  • Dressing
  • 4 thick slices of white or granary bread, without crusts
  • 3 tablespoons olive oil
  • 1 garlic clove-chopped
  • Dressing
  • 1 egg
  • 1 garlic clove-chopped
  • 2 tablespoons lemon juice
  • dash worcestershire sauce
  • 3 anchovy fillets-chopped
  • 120 millilitres olive oil
  • 5 tablespoons grated parmesan cheese
  • salt and ground black pepper
Instructions
  1. Preheat the oven to 220c/Gas 7.
  2. Seperate rise and dry the lettuce leaves. Tear the outer leaves roughly and drop the heart. Arrange the lettuce in a large salad bowl.
  3. Dice the bread and mix with the olive oil and garlic in a seperate bowl until the bread has soaked up the olive oil. Lay the bread dices on a baking sheet and place in the oven for about 6-8 minutes (keeping an eye on them!) until golden. Remove and leave to cool.
  4. To make the dressing, break the egg into the bowl of a food processor or blender and add the garlic, lemon juice, worcestershire sauce, and one ov the anchovy fillets. process until smooth.
  5. With the motor running pour the olive oil into a small stream until the dressing has the consistency of singal cream. Season to taste with salt and pepper, if needed.
  6. Pour the dressing over the salad leaves and toss well then toss in the garlic crutons, Parmesan cheese and finally the remaining anchovies and serve immediatly.
Notes

Any crisp lettuce will do in this delicious salad!
