Homemade Christmas Mince Pies

These delicious homemade mince pies will be a hit at christmas. This is our McMahon family recipe.
Ingredients
- 225 grams flour
- 30g grams icing sugar
- 1 tablespoon ground cinnamon
- 150 grams butter
- grams finely grated rind of 1 orange
- 4 tablespoons iced water
- 225 grams mincemeat
- 1 grams beaten egg to glaze
- grams icing sugar to dust
- grams fresh cream to serve
Instructions
- Sift together flour, icing sugar and cinnamon. Rub in butter until it resembles fine breadcrumbs, Stir in finely grated orange rind.
- Mix to a firm dough with water, Knead lightly, then roll out to 5mm thickness. Use a 7cm round pastry cutter, cut out 18 circles, then cut out 18 smaller 5cm circles.
- Line two greased bun tins with the larger circles. Fill each one with a spoonful of mincemeat (the mincemeat with brandy is particularly good). Brush the edges of pastry with beaten egg, then place the smaller circles on top, pressing the edges well to seal.
- Brush with beaten egg and leave to rest in the fridge for 30 to 40 minutes. Preheat the oven to 200c or gasmark 6.
- Bake for 15 to 20 minutes until golden brown. Remove to wire rack.
- Dust with icing sugar and serve warm with fresh cream.
